Originally designed to reduce chill haze by breaking down long chain proteins, White Labs discovered that Clarity-Ferm effectively breaks down gluten proteins as well. This is an excellent option for people sensitive to gluten but is NOT a guaranteed method of eliminating all gluten from beer. And, of course, it also works great to remove chill haze!
